Vinification: rapid pressing of the grapes and start of alcoholic fermentation at a controlled temperature. At the end of the alcoholic fermentation the autoclave is closed to create the froth then made with natural sugar.
Bottling: With an isobaric machine and capping with 100% cork microgranule technical stopper.
Alcohol: 11-12%Vol
Total acidity: 7/7,5g/L
pH: 3.2/3,3
Shelf life: 1 year.

Color: very light yellow with greenish reflections.
Nose: citrus, pear, intense fermentation notes, yellow fruit.
Taste: acid, decidedly fresh. Very fine foam.
Pairings: ideal for aperitifs, excellent with fish first courses, pizza and for snacks.
